    • 240 g flour (150 g - in the dough, 90 g - in the filling);
    • 2 medium sized pears.

    Cooking technology:

    1. Knead the shortbread dough with butter at room temperature. Spread it evenly along the sides and bottom of a split mold with a diameter of 20 cm.
    2. Put pears, peeled and cut into thin plates, on the bottom of the shortbread base of the pie.
    3. Put butter, sugar and flour in a saucepan with a thick bottom on the fire and boil until a beautiful caramel color and a viscous consistency. Pour the fruit over the top with the finished filling.
    4. First, bake the cake for 20 minutes at 180 degrees, then take it out of the oven, cover it with foam from whipped proteins with sugar and continue heat treatment at 150 degrees for another 20 - 25 minutes.
    5. For shortbread sour cream dough you will need:

    • 120 g soft butter;
    • 120 g sour cream;
    • 60 g sugar;
    • 1 egg;
    • 260 g flour.

    For almond-pistachio nut cream, take:

    • 50 g butter;
    • 50 g almond flour;
    • 50 g powdered pistachios;
    • 400 g icing sugar;
    • 1 egg;
    • 20 g starch.

    For the filling and decoration of the cake, you should prepare:

    • 2 pears;
    • 1 grapefruit;
    • 60 - 90 g apricot jam.

    Bakery products:

    1. Beat butter with sugar, add sour cream and eggs. After, add flour with baking powder and quickly knead the dough. Collect it in a bun, and then distribute it in the shape and put it in the refrigerator for 40-50 minutes.
    2. For the nut cream, beat the butter with the powder, adding the rest of the ingredients in succession.
    3. Peel and cut the pears into wedges. Remove the peel from the grapefruit, remove all white streaks and films, disassemble into slices.
    4. Transfer the cream in an even layer onto the base, distribute on top, alternating, pear and grapefruit slices. Cook the cake for 45 minutes at 200 degrees. Grease the finished product with hot apricot jam.

    Fluffy pear pie

    This pear pie is made on thin yeast dough:

    • 2 eggs;
    • 180 g sugar;
    • 200 ml of milk;
    • 150 ml of vegetable oil;
    • 10 g yeast;
    • 5 g baking powder;
    • 3 g salt;
    • 280 g flour.

    The filling of the pie will be pear jam made from:

    • 3 pears;
    • 20 ml lemon juice;
    • 80 g of sugar.

    Sequence of work:

    1. Combine diced pears with sugar and lemon juice in a frying pan. Send the composition to the fire and cook a thick pear jam.
    2. For the test, the eggs should be beaten with sugar, diluted with milk, having previously dissolved yeast and baking powder in it. Pour in vegetable oil, add salt and flour.
    3. Pour the resulting batter into a greased mold and leave warm for an hour. Then bake a fluffy cake at 200 degrees.
    4. Grease the hot pie with pear jam, sprinkle with powder and cut into portions.
