Garden stage restaurant. Stage on Sadovaya-Kudrinskaya

Interesting story

The conceptual restaurant STAGE was opened in an old, rich "pedigree" city estate of the late 19th century with panoramic cyclopean windows in the center of Moscow. Earl Orlov once held balls here, and today it is not so much a catering establishment as a cozy and hospitable estate, where the kitchen is the center of life, and the meal is the most important event. The restaurant occupies the main building of the architectural ensemble, in the left wing of which A.P. Chekhov lived and worked. Therefore, now an honest cuisine is complemented by an aristocratic atmosphere, saturated with creativity and intelligence. The history of the mansion on Sadovaya-Kudrinskaya goes back to the time of 1812, when social events and balls were an integral part of the life of the nobility. Wonderful food and delicious drinks, which were treated to General M.A. Orlov, were famous throughout Moscow. The walls of the restaurant still remember the delight and joy, the bursts of opening champagne. STAGE honors history - in the restaurant, dear guests convey a particle of the wonderful romantic era of the "golden" age with its architecture and gastronomy, which allows you to fully enjoy the atmosphere and taste of the dishes served. STAGE is an author's project of a young and ambitious restaurateur Arkady Petrov. The format of a democratic institution with high-quality and understandable food for everyone, where everyone can replenish the balance of gastronomic pleasures and positive impressions, was liked by the guests of the Vernadsky-University Prospectus district, and Arkady Petrov decided to move his brainchild to the center of the capital. Both regular guests and new admirers of the STAGE style are welcome here, the concept of which is a gastronomic journey through the South of Europe. The interior plays an important role in creating the overall mood and hospitality. Modern minimalistic interior in contrasting colors is complemented by volumetric graffiti and elements in the style of "Great Gatsby". The multi-tiered open space of a mansion with a spiral staircase, as in a good large house, is correctly zoned into the sofa and banqueting hall, and successfully diluted with cozy balconies, where any company can have a great time. High ceilings, huge seven-meter windows that provide an abundance of natural light, two floors of a majestic colonnade, many decorative accessories, as well as stylish retro lamps create a solemn, yet very comfortable atmosphere. The colorful cuisine is of course the centerpiece here, and food is treated as the best treat after a hard day at work. The kitchen, launched in 2016 by Arkady Petrov together with a Serbian team, has gained more charm and fashionable flavors. Gastronomic fantasies of a vibrant South European cuisine, in which dishes of Serbian, Hungarian, Balkan, Italian and Mediterranean cuisines, form the basis of the restaurant menu, set by the brand chef Goran Stepanovic (20 years of experience in well-known restaurants in Serbia, Azerbaijan and Russia). In the spectacular premises of the renovated mansion, chef Vladimir Prigorodov, who previously headed the kitchens of the restaurant projects of the Arpikom chain (Goodman, Mamina Pasta), opens up new facets of the culinary traditions of southern Europe with a Serbian accent. Along with the meat section typical for the South of Europe, seafood now dominates the menu: oysters, for which there is a special aquarium (4200 rubles / 12 pcs.), Mussels in tomato sauce(720 rubles), grilled seafood (2800 rubles), a lot of shrimp and squid are present in different dishes... Guests are recommended to try the Squid Trumpeter in creamy sauce with basil (890 rub.), Shrimp salad in original filing in the form of rolls of mango marmalade sheets (690 rubles), Carpaccio from Japanese lachedra (680 rubles) and spicy tomato-based beef soup Chile Con Carne (300 rubles) - these are the top positions of the new menu. Guests familiar with the establishment already have their own Serbian favorites (specialties) that must be tried at STAGE: Balkan salad of fresh vegetables and Vlashki feta cheese (300 rubles), Sicily salad with warm chicken breast (420 rubles), stewed in wine Shrimps na-Buzara (890 rub.), Serbian national cutlet from juicy minced meat Pleskavitsa (490 rubles) and, of course, meat in all its diversity. The menu also includes traditional snacks: Beef carpaccio (750 rub.), Tar-tar from fresh tuna with segments of oranges (550 rubles), salmon tar-tar with avocado mousse (550 rubles), herring at home (320 rubles) and much more. Variety of types of homemade pasta and risotto: Pasta with seafood and tomatoes in a creamy sauce in the original serving (RUB 700), Pomodoro Pasta (RUB 400), Pasta with salmon and spinach (RUB 620), Black risotto with squid (RUB 590), etc. .d. The meat page looks more solid than others and includes both classic steaks and signature dishes. There is also Roast Lamb (490 rubles), and the Forester's Schnitzel with mushrooms, uncooked smoked bacon and tomatoes (530 rubles), and Lamb Shank with mashed potatoes(750 rubles), and Duck leg with ginger pear (480 rubles), and Turkey fillet with gnocchi in cheese sauce(540 rubles), and Chevap stuffed in bacon with the addition of feta cheese (590 rubles). The foundation meat menu- grilled positions: from Chicken Tabaka (690 rubles) and Rack of lamb (1350 rubles) to Ribeye Steak (1500 rubles) and Balkan sausages with branded spices (590 rubles). In the fish program, it is worth focusing on Salmon Steak (680 rub.), river Trout(690 rubles) and whole fried Dorado (750 rubles). The menu includes a wonderful Seabass baked in salt (750 rubles), which you rarely find in Moscow restaurants, is served in a sauce with olive oil and capers. A special feature of the restaurant is a wood-burning stove (furuna) for pizza, pies and flatbreads. It is open to the eyes of visitors, providing an opportunity to follow the fascinating process of making pizza on the thinnest dough right from their seats. Several of its types are presented here, including the author's, so that even the most experienced gourmet can discover something new. The restaurant serves popular meat pizza(650 rubles), pizza 4 cheeses (430 rubles), pizza Caprichoza (450 rubles) or pizza with porcini mushrooms (550 rubles), as well as a specialty pizza with roast beef (590 rubles) or baked vegetables (390 rubles). Desserts are mostly classic, such as Tiramisu (380 rubles), Sabayon (250 rubles), Cheesecake (320 rubles), Napoleon (320 rubles), however, there are also exclusive positions. Such a special Strudel with pear and cherry (320 rubles), Austro-Hungarian cake with the author's reading "Pistachio Esterhazy" (280 rubles) and Medovik (320 rubles) can only be tasted at STAGE. The wine list deserves special attention, because there are about 100 collected here, among which are elite drinks from all over the world. For convenience, the wine list is divided into special blocks, the names of which determine the structure and purpose of the drinks. The bar menu includes bold original and classic cocktails, a variety of tea and coffee cards, homemade lemonades, and groups of spirits. There is a hookah menu and a cigar room. For convenience, there is free parking in the courtyard with valet parking. Large portions, understandable food, the aroma of fresh bread, a light in the oven and a space filled with air and light are quite enough reasons to be convinced for yourself that the gastronomic hearth inside Sadovoe will warm and add new impressions to everyone. The Stage restaurant is not a new establishment. Before settling on Sadovo-Kudrinskaya, it entertained the residents of the "Vernadsky Avenue - University" area, so it should be considered as a fully formed participant in the restaurant market, and there is something to consider in it.

I'll start with a location that I would describe as difficult, because at least five different establishments passed through the yellow and white 19th century mansion. The last one to try to stay there was the sad Palatin. It didn't work out, Oksana Federova's restaurant quietly evaporated, and the vacant space was occupied by Stage, and it drove in loudly, with a PR campaign, photographs and loud assurances about the excellent quality and honesty of the cuisine.

Internal changes only affected the color of the walls and the arrangement of furniture. Now the walls are gray with different shades. The layout and leveling remain the same. Behind the glass doors, guests are greeted by a small corridor and a stepped foyer with a hostess counter, but without the hostess herself. Further on, a view of the dining space, which consists of two floors, opens. On the first there is a large hall with a huge window, a semicircular row of columns, a bar and a curving staircase. There is a lot of space, the tables are laid out imposingly, far from each other, but for some reason, comfort is not felt. Even the murmur of open oyster aquariums attached to one of the columns does not help. The second floor is also spacious, with different levels, nooks and views of the lower part.

The restaurant itself defines the concept of the menu as “a gastronomic journey through the south of Europe”. The definition is deliberately vague, because the south of Europe is large, from Gibraltar to Cyprus. A quick glance along the lines reveals a typical Moscow mix, spiced up with a section from Serbian cuisine. The main accent is Italian, but not traditional, but revered.

The food in Stage, like the menu, only depicts the authenticity of the original sources, but in reality, many dishes are a neat imitation.

For example, the menu says: “Tuna tartare. Tuna fillet with soy sauce, sesame oil and arugula. Served with tomato ice cream. " On the plate, a completely different story is read - a bunch of tuna cubes on a tasteless pale green sauce with salad mix petals, halved berries and orange scraps. No distinct spices, no soy sauce, arugula and tomato ice cream. The taste is poor, pale, empty.

I had to deal with "Paste Carbonara" even when ordering. What kind of pasta was meant was not explained in the menu. The waiter was also unaware. Finally I was offered spaghetti. I agreed and instead of the classic Italian dish "Spaghetti Carbonara" I got a typical Moscow cream cheese soup with overcooked noodles and sluggish bacon. The taste is heavy, luscious, not at all Italian.

"Shank of lamb with mashed potatoes" looked quite voluminous, but again there were problems with taste. The meat was barely warm, dryish, the sauce was sharp, rough and not salty at all, and the mashed potatoes were more like cooled potato mousse. "Traditional Balkan lamb sausages" were presented by the waiter as homemade, but what arrived at the table, on homemade sausage didn’t look like it. First, there was only one "sausage". Second, it was dry and hinted at a thawed starting product. The taste is monotonous - peppery. The potato side dish looked sluggish and smoked suspiciously by microwave steam.

I don’t know exactly what relation the Chili con carne soup has to the “South of Europe”, but I was personally convinced that it had nothing to do with the real “Chili con carne”. In a black bowl rested a homogeneous brown sweet mass without pungency or any sense of richness and authenticity.

On behalf of a group of desserts, he recounted his rhyme "Tiramisu" extremely unsuccessfully. He did it too vaguely, hard, dense and bitter.

On the positive side, I would like to note "New York Steak", which was cooked correctly. The meat was allowed to rest, supplied with pepper and salt, did not cut it and did not miss the roast. Also, “Pizza Margarita” did not disappoint, however, it was cooked in the bar, because it was in the center of the wooden bar structure that a wood-burning stove was installed. The pizza turned out to be basic and solid. The ratio of sauce and cheese is correct. The dough is thin, but did not turn into porridge. The only drawback is that the sauce lacked sweetness, which is why the acidity dominated the taste.

Two more pluses - very reasonable prices for the center and its own parking lot with a very welcoming, polite valet.

The service staff was not at all ready for full-fledged work. With two busy tables, cooks, managers, hostesses and waiters preferred not to watch the hall, but to talk at the bar. My waiter was not familiar with the menu, he did not know the recipe for the dishes, he confused part of the order. So, instead of "Tuna tartare", he brought "Beef tartare", and at the same time, before correcting his mistake, he still offered to eat beef, since the dish had already been cooked.

The bottom line is:

Despite the fact that the Stage restaurant is not a newbie, on Sadovo-Kudrinskaya, it looks like a crude project with mediocre food and errors in service, and this is not the best combination for such an unlucky location.

The Stage restaurant on Sadovaya-Kudrinskaya is a place for gourmets and history buffs.
There is much more to a visit to a restaurant than a simple meal. For the guest to be satisfied, excellent cuisine and a pleasant atmosphere must converge at one point. An exquisite touch is added by the historical value of the place. All this and even more can be found in the very center of the capital in the Stage restaurant on Sadovaya-Kudrinskaya, 6.
The restaurant is located in a 19th century mansion next to the Chekhov house-museum. Columns, a spiral staircase in the center of the hall and rich, but not flashy furniture immediately transfer us to an atmosphere of luxury and social reception. The Stage restaurant will perfectly host both a business meeting and a romantic dinner and family lunch. Lovers take food on fresh air can comfortably sit on an open veranda overlooking Chekhov's garden.
Looking at the menu, not a drop of doubt remains - no one will be able to leave hungry. Salads, soups, meat and fish dishes - the variety is amazing and makes you want to come here again and again. A successful end to your meal will be a tea party with amazing desserts. The check will delight even the most diligent owners - stewed cabbage soup with beef brisket and white soups will cost 520 rubles, and a wild salmon steak - only 1600 rubles. Isn't this happiness?
A restaurant manager knows that spiritual food is an important part of the “diet” of a modern person. Therefore, the poster is a must-see, and the event is a must-see. Acoustic harp stars and leading electronic music DJs perform on the stage of the institution. And during the FIFA World Cup Stage became almost an Argentine cultural home!
For connoisseurs of atmospheric gatherings under the smoke of a hookah or rare varieties of Latin American and Cuban cigars, the Stage restaurant has prepared a gift - a separate lounge. Here, no one bothers to enjoy the tart smell and taste of tobacco.

Well-known to the residents of the district, Vernadsky-University STAGE Avenue is now located in the city estate of the late 19th century not far from the Patriarch's Ponds at the address: Sadovaya-Kudrinskaya, 6, building 1. Along with meat, seafood now dominates the menu: oysters (there is a special aquarium for them), squid and shellfish, including a fairly rare trumpeter (in the Stage menu, the trumpet player is served with squid in a creamy basil sauce at a price of 890 rubles), Shrimps on- Buzara (a traditional Croatian dish of fresh shrimp stewed in wine with fresh tomatoes, 800 rubles per serving), Argentinian grilled shrimps (730 rubles per serving). A variety of grilled fish and shrimp, and Dorado and Seabass are baked under a delicious salt crust. Guests of the restaurant are advised to try an assortment of pizzas on the finest crispy dough, a trumpeter with squid in a creamy basil sauce, a salad with shrimp in a mango marmalade roll, and a tomato-based Chile Con Carne beef soup. The chef of the restaurant is Vladimir Prigorodov, who previously headed the kitchens of the Arpikom chain restaurants, the brand chef is Goran Stepanovich, Profi with 20 years of experience in famous restaurants in Serbia, Azerbaijan and Russia. Honest cuisine for honest money, large portions, food that everyone understands, the aroma of fresh bread, a light in the oven and a space filled with air and light - there are enough reasons to be convinced for yourself that the new gastronomic hearth inside Sadovoe will warm and add new impressions to everyone. In STAGE, you can be yourself in everything. Whatever you come here in, jeans, sneakers or an elegant evening dress, you will be cozy and comfortable. And given the democratic average bill of the restaurant, which remained at the level of 1,500 rubles, you can be sure that neither fastidious gourmets nor friendly guests from the neighboring house will remain indifferent. Historical background Mansion on Sadovo-Kudrinskaya, 6с1 - the former city estate of V.I.Shubert - the house of the doctor Y.A. Korneev. The estate includes the main house and two adjacent wings (in the left wing there is now the A.P. Chekhov house-museum). In 1873, by order of the doctor Yakov Alekseevich Korneev (1845-1911) and under the leadership of the architect V.F. adjacent bay windows. In 1891-1892. the general complex was supplemented by the buildings of the main house and the right wing. The building was built in accordance with the project of the famous Russian architect, restorer and academician of architecture Vasily Petrovich Zagorsky (1846-1912). As a result, three structures were included in a single architectural structure - the main house and two outbuildings. All objects are outstanding representatives of eclecticism, as evidenced by the stucco moldings and facades. In 1886-1890. years the left stone two-story wing was rented by Anton Pavlovich Chekhov before leaving for Sakhalin in April 1890. Chekhov wrote this about him in one of his letters, comparing it to a chest of drawers (in fact, the facade of the house somewhat resembles an old chest of drawers), and jokingly said that the color of the house is "liberal, that is, red." This was the period of the writer's creative upsurge. In this mansion, Chekhov wrote his first famous works: "Goblin", "Bear", "Proposal", "Wedding", "Tragic against his will", "Tatiana Repina", stories "Steppe", "Lights", "Boring story", many stories. Chekhov's guests in the "dresser-house" were writers, artists, actors, musicians: V.G. Korolenko, V.A. Gilyarovsky, A.S. Suvorin, D.V. Grigorovich, I.I. Levitan, F.O. Shekhtel, P.I. Tchaikovsky, V.I. Nemirovich-Danchenko, and other prominent people. Here, in 1954, a branch of the State Litmuseum was opened, dedicated to the work and personality of the writer. In the memorial space of the museum, the living room, study and bedroom of the writer, rooms of his sister Maria and brother Mikhail have been recreated. In the halls of the literary exposition, reflecting the life and work of A.P. Chekhov, one can understand how gradually a writer of “big” literature emerged from the author of the “small press”. In general, the house of Ya.A. Korneev has retained its original architectural appearance to this day. In 2008, the main house of the estate was occupied by the restaurant "Gusar - 1812". Since that time, a glass wall and a magnificent portico, designed in the spirit of classicism, rise above the backyard of the house. The majestic portico is decorated with antique armor, among which stand standards with double-headed eagles - these are allegories of war with symbols of military strength, victory, valor and honor of the Russian Empire. Earlier, on top of the portico, there were numbers "1812". The portico was not foreseen in the original project, but, despite this, it perfectly fit into the overall style of the building. A bas-relief with the same symbols as on the portico appeared at the same time as the portico. The lateral parts of the rear façade of the mansion have survived and date back to the 19th century. A reference to the events of 1812 is connected with the fact that the house is located on the site of the estate of Princess V.I. Meshcherskaya, dilapidated by the fire of 1812. Hero of the Patriotic War, Lieutenant General of the Lubensky Hussar Regiment M.A. Orlov built a mansion here and already in 1821 moved a large family to it, opening the doors of his hospitable home for friends in Moscow style. This house was visited by N.M. Karamzin, V.A. Zhukovsky, I.A.Krylov, Vasily Pushkin and many other famous people of that era. In December 2010, the state historical and cultural expertise came to the conclusion that the inclusion of the ensemble of the city estate of V.I.Shubert - Ya.A. Korneev - in the register of cultural heritage sites of regional significance and the assignment of the object to historically valuable city-forming objects was unreasonable. Today the restaurant STAGE is hosted in the main house of the manor. Today the restaurant STAGE is hosted in the main house of the estate. The Stage restaurant is the first (and promising!) Project of the restaurateur Arkady Petrov. Three floors form a space for relaxation - noisy and lively, calm and serious, cozy family and musical youth. On the ground floor, there is a gastronomic market selling farm products, fresh pastries and home-made bread (including such specialties as Serbian somun buns, pita burek iz thin dough hand-rolled filo), semi-finished and ready-made meals, desserts from the pastry chef, and craft beer. The gastromarket is a kind of "preface" to the restaurant's gastronomic concept, for which the head chef from Serbia Goran Stepanovic is responsible. Having collected dishes from the South of Europe on the menu, he presented them to the guests in both classic and original versions, observing the principle of "Understandable food for honest money." When it comes to honesty, there are not only eco-friendly (and therefore high-quality) products here, but also large portions. This should be taken into account when choosing, for example, meat dishes for which it is famous Serbian cuisine... However, breakfasts are very hearty here (from 8 to 12 hours). For example, "Slovensky" - with grilled sausage, fried crispy bacon, fried eggs, cheese, French fries. Or “Primorskiy”, which is loved by many - with poached egg, salmon and trout, red caviar and boiled young potatoes with fragrant dill. Even experienced restaurant critics the branded serving of completely familiar dishes surprises. For example, "Greek salad" is cucumbers, tomatoes and bell peppers on a pasta of olives with cheese cream. The usual ingredients can be combined in a completely unusual way: for example, in the "Basque Salad" - roast beef, mushrooms, corn with vegetables and spicy sauce... Tuna tartare is served with tomato ice cream and Stage pasta is served with bacon ice cream. By the way, all ice cream is only of our own production. The open kitchen of the restaurant accommodates a grill, a skewer, a Serbian furunu oven for baking pizza, flatbread, bread. Sach is also served at the table - a cauldron in coals, where meat and vegetables are stewed. Meat lovers will appreciate the gourmet pleskavitsa with bacon (chopped meat cutlet fried on the grill), chevap (sausage) stuffed with feta in bacon, soft pork belly in spicy sauce... A more "ladies'" option is duck breast with ginger pear. Sweets from the pastry chef are the special pride of the restaurant. They are as tasty as they are interesting to look at. Warm pear with chocolate-caramel crumbs and three types of sorbet, bird cherry cake with blueberry sauce, pesh-melba - juicy peaches with vanilla ice cream and raspberry sauce. Stage Bar offers signature non-alcoholic cocktails, a large tea list. For younger guests, the restaurant has children's menu... There is a 20% discount from 12 to 16 hours. The upper floor of the restaurant is occupied by a large hall with a stage. The atmosphere here is more of a club: a large bar, concerts, performances and parties. Therefore, Stage can host events of a wide variety of formats - from noisy musical evenings and classical banquets to intimate dinners and children's parties. The total capacity of the restaurant is 350 seats. The main hall on the second floor overlooking Vernadsky Avenue can accommodate up to 200 guests, there are also separate rooms for 70 and 20 guests, as well as a children's room equipped for games.

STAGE Restaurant - honest food, delicious price.

STAGE multi-format and concept restaurant in the south-west of the capital it covers an area of almost 2000 m2. Rare scale for a restaurant project nowadays, and yet! The long-awaited three-level restaurant for the Vernadsky Prospect district opened its doors to everyone, without exception, in the fall of 2016.

The idea to create the format of a democratic institution with delicious and high-quality food owned by restaurateur Arkady Petrov and Djordje Kostic. A huge, even by Moscow standards, three-story building is divided into zones of different purpose and interior.

On the ground floor there is a Craft Burger (30 seats), where you can taste excellent gourmet burgers, as well as grab an invigorating coffee or fresh on the way to work. Guests will be offered a wide selection of draft beer (more than 10 varieties).

On the second floor there is the main restaurant hall (220 seats) with an open kitchen, a contact bar and several spaces. This is a large, bright loft with pistachio-lemon furniture and an abundance of tubs of greenery. There is a coffee area, a banquet area (80 seats), visually separated from the main hall, a children's room, a small private and cozy living room for 20 people, furnished in the style of the 70s for private events, successful business meetings, business negotiations or romantic dinners.

The spacious closed mezzanine of the third floor houses a club area with a large bar, a place for a DJ and a stage. This more brutal space is conducive to active rest.

Interior designer Olga Roset carefully tried to design the interior. The source of inspiration, again, was the South of Europe and the architecture of the building itself of the 70s of the XX century in the style of Le Corbusier, dictating many design decisions. According to her, “a deep sea with an azure backwater and a hot coast was created here. Concrete, glass, ceramics, green floristry, a little nostalgia for the middle of the twentieth century ... ”. The main focus was on stylish vintage furniture in a cozy honey color scheme, lovingly collected from all over Europe, which, meanwhile, is supported by shades of saffron and deep greenery and other elements of the interior. The result is a mixture of international style with vintage midcentury. A combination of natural wood, metal, volumetric installations from living plants and photographs taken by Arkady Petrov himself.

The concept of the restaurant project is based on the culinary traditions of southern Europewith a "Serbian" accent. Bright Balkan cuisine, in which weaved together traditional dishes Serbian, Hungarian, Austrian, Romanian, Bulgarian and Greek cuisines, forms the basis of the restaurant menu - the so-called gastronomic journey through the South of Europe in the author's interpretation Chef from Serbia Goran Stepanovic (Goran Stepanovic) with 20 years of experience in famous restaurants in Serbia, Azerbaijan and Russia.

The huge open kitchen of the restaurant accommodated a grill, a skewer, a furunu (Serbian oven) for pizza, pies, flat cakes and bread. The best dishes from fresh selected meat from the best Russian manufacturers, as well as from fresh fish, prepared by different technologies, both over open and closed fire.

There are many sections on the menu - there are wood-fired dishes, and sach (meat stew on coals), and grill, and homemade pasta, and pizza, and fish, and snacks. The meat is cooked the most different ways: boiled, stewed, simmered, baked, smoked and most importantly - fried on a grill and charcoal. Of course, all Serbian dishes deserve attention, but at STAGE you should definitely try pleskavica, chevap stuffed with feta cheese and cevapcici.

The bar menu includes a varied tea and coffee list, lemonades, Serbian mineral water, wine map. And the chef-bartender Sergey Naumov will treat you to bold original and classic cocktails.

The restaurant has a special children's menu and an animation program.

Honest cuisine for honest money, large portions, food that everyone understands, the aroma of fresh bread, a light in the oven, panoramic views, an air-filled space - there are enough reasons to be convinced for yourself that gastronomic life exists outside the Garden Ring.

In STAGE, you can be yourself in everything. Whatever you come here in, jeans, sneakers or an elegant evening dress, you will be cozy and comfortable. And given the democratic average restaurant bill of 1,500 rubles, you can be sure that neither fastidious gourmets nor friendly guests from a neighboring house will remain indifferent.
