Chechil cheese or as the people also call it pigtail cheese has Caucasian roots of origin. Armenia is considered the birthplace of this cheese, where it has been prepared for many centuries in a row, along with numerous other types of cheeses. Close relatives of Chechil cheese are Suluguni, Lori, Chanakh, Eghegnadzor. Unlike these types of pickled cheeses, the appearance of chechil cheese has the appearance of an intertwined pigtail. Chechil cheese is prepared from cow's milk, adding rennet (pepsin) to it, which leads to its rapid souring and the formation of milk flakes.

With a certain heat treatment, milk flakes are pulled into long fibers, which are then braided into pigtails. After that, the finished cheese braids are laid out in a special brine for maturation. Ready chechil cheese is then often smoked in special smokehouses. Today, pigtail cheese, due to its spicy-salty taste, along with chips and french fries, is considered a popular beer snack.

In addition, it can also be used as a component of many dishes. Often cheese is added to salads, soups, baked meat in the oven. As for salads, pigtail cheese can be one of the ingredients, or as an original decoration. For example, it turns out original and beautiful. Ingredients:

  • Pigtail cheese - 100 gr.,
  • Tomatoes - 2-3 pcs.,
  • Cucumber - 1 pc.,
  • Bulgarian pepper - 1 pc.,
  • Onion - 1 pc.,
  • Mayonnaise - 1 tbsp. a spoon

Salad with pigtail cheese and tomatoes - recipe

Wash and cut the tomatoes into slices.

Bulgarian cut into strips.

Place tomatoes and peppers in a bowl.

Chop the cucumber into quarters of circles.

Add it to the bowl with the tomatoes and peppers.

Cut the onion into half rings.

Put it in a bowl with the rest of the salad ingredients.

Add mayonnaise and salt to salad. Try not to use a lot of salt, as our cheese is salty.

Toss fresh vegetable salad.
